Over the years I’ve loved the spicy kick of Buffalo chicken wings.  Buffalo chicken wings to me are reminiscent of good times with friends, parties, nibbles, finger food, and happy hour treats.  With this recipe, I took the best of fun, spice, and finger food and turned it into a warm, satisfying, and  truly yummy HCG Phase 2 meal.

Many of the recipes in my cookbooks call for the tangy kick of cayenne pepper sauce to take them to another level of deliciousness and this Buffalo Chicken and Tomatoes recipe is no exception.  I love cooking with cayenne because I believe that it kicks up metabolism and weight loss a notch and helps the release of fat and toxins during HCG Phase 2.  Beyond that, it just plain tastes great and cayenne pepper adds a little flavor and heat to any of your favorite P2 recipes.

I have no idea what came over me the day I tossed tomatoes and fresh oregano along with some buffalo sauce (cayenne pepper or Franks Red Hot work well) onions, garlic, and oregano and created my Buffalo Chicken and Tomatoes Recipe HCG Phase 2.  It was so flavorful and good that I just had to share it with you.

Buffalo Chicken and Tomatoes – HCG Phase 2

Ingredients

100 grams chicken

2 medium tomatoes, diced

1/2 cup chicken broth

2 Tbs. buffalo sauce (or cayenne pepper sauce)

1 tsp. onions, minced

1 clove of garlic, crushed and minced

Pinch of oregano

Black pepper to taste

Directions

Saute’ chicken with onions, garlic, and  1 Tbs. buffalo sauce until lightly browned.  Deglaze the pan with chicken broth and add tomatoes and spices.  Simmer, stirring gently for 5-7 minutes adding additional water or chicken broth as needed to create a light sauce.  Top with fresh herbs or extra oregano and serve.

HCG Phase 3 modifications:  Top with a little blue cheese.  Mix it up with some spicy sausage and bell peppers.
