Heirloom Tomato Salad Recipe HCG Recipes Phase 2 and 3

It has been so fun for me as a lifetime foodie (and hCG food blogger of course) being a part of a Community Supported Agriculture program (CSA) and getting fresh, organic, vegetables from my local farm every week. This is my first time being part of a CSA and it’s proving to be really fun getting that weekly mystery basket of vegetable goodies.  I’m finding that receiving such beautiful produce really gets me creative in the kitchen!  My local CSA is known in the area for their luscious and delicious organic Heirloom tomatoes.  This weeks treasure, a bounty of tomatoes inspired this Heirloom Tomato Salad Recipe for Phase 2 and modified deliciously for Phase 3.

Heirloom Tomato Salad HCG Phase 2

Heirloom tomatoes are one of the most luxurious and flavorful tomatoes that are currently in season. They come in a variety of rich colors and variations from a deep burnt red color to bright green, orange, and yellow. One of my favorite ways to work with Heirloom Tomatoes is to make fresh summer salads. I prefer to work with Heirloom tomatoes raw simply because they are just too precious and flavorful to cook up, not to mention super nutritious.  Why mess with perfection anyways when you are working with the queen of all tomatoes.  Use your Romas, Beefsteak, and Salad tomatoes for your casseroles, soups, and other tomato recipes but consider the Heirloom whenever possible for your freshest and best summer salad recipes. I’ve found that while on the hCG Diet that it’s really important to really enjoy your hCG diet meals.

I recommend that you spoil yourself with the best and most delicious foods that you can while on such a restricted plan. This is really one of my own, personal, secrets for success and staying motivated with hCG diet.  Allow yourself to have the very best and really savor every bite.  You will likely feel much more satisfied and find it easier to stick to your diet.   Enjoy this decadent and delicious Heirloom Tomato Salad Recipe for Phase 2 and don’t be afraid when you get to Phase 3 to spice it up with my Phase 3 modifications like feta cheese and kalamata olives.  Delicious!

Heirloom Tomato Salad Recipe hCG Phase 2

Heirloom Tomatoes

4 medium Heirloom Tomatoes

2 Tbs. Minced red or green onion

1 Clove of garlic crushed and minced

Fresh basil and oregano to taste (Mine comes from my own herb garden)

2 Tbs. Red wine vinegar Salt and pepper to taste

Phase 3 modifications: Add 1/2 cup cubed or crumbled feta cheese, 1/4 cup minced kalamata olives, 1/4 cup diced bell pepper, and a Tablespoon of olive oil.

    First off I am so glad I came across your site! I am wondering about serving sizes! Like the heirloom tomato salad how many servings in total or do I just weigh it out after?

      With vegetable servings on P2, you can have as much as you like in moderation. I usually used 1 cup to 1 1/2 cups of tomatoes.
