Fennel – A Favorite HCG Phase 2 Vegetable

Okay, I know, it’s weird to be obsessed with fennel but as one of the allowed foods on the HCG Diet P2 I have learned how amazing and versatile it really is.  To be perfectly honest, I had never knowing eaten fennel or cooked with fennel prior this diet.  The delicate scent and slight licorice flavor of anise is absolutely amazing.  Now, you must realize that fennel is not a very attractive vegetable which is why it didn’t make the cut for the cover art for my new edition of “The HCG Diet Gourmet Cookbook”  Volume 1 in lieu of the more beautiful apples, strawberrys, and leafy greens but I have to say that it is becoming quite the star in my kitchen.

In fact, I became so excited about the uses of fennel that I’m actually writing a second “HCG Phase 2” (also known as Phase 2 or P2) HCG Diet Gourmet Cookbook!  I really dug deep to create some amazing recipes this time.  A few of my ideas are top secret at the moment but I’m going to post some recipes on this blog very soon.

So, lets talk about some of the health benefits of our delicious (and my favorite) hcg vegetable Fennel.  Well, it’s been known to be helpful for anemia, constipation, indigestion and other digestive complaints.  It’s also been touted as useful for respiratory ailments such as bronchitis, hormone balancing.  While it would be hard to overdo fennel in its natural state or in the amounts recommended for this diet, it does have some properties that can be harmful if taken in too high a quantity or concentration.

Still, the health benefits are numerous.  You can make delicious recipes with the fennel bulb which cooks up tender and delicious.  Roast it, bake it, puree it, steam it, marinate it, the choices are endless.  Try pairing it with beef, pureeing it with herbs, roasting it with chicken or fish.  You can even make a tea from the leaves and seeds.  As for vitamins, fennel is high in Vitamin C, potassium, folic acid, and trace minerals.

So Enjoy this wonderful and healthy hcg vegetable Fennel.  And if you’ve never heard of fennel (Like I was, I wouldn’t be surprised if you haven’t)?  I recommend you try to find some and try it for yourself.

    Hi Jerry! Fennel is a great alternative and many people use it in place of potatoes to avoid the heavy starches, even after the HCG Diet.
