I released my first Cabbage Rice recipe in the HCG Diet Gourmet Cookbook Vol. 1 nearly 9 years ago and the recipe has become a huge hit among low carb and HCG dieters. Lime Cilantro Cabbage Rice Phase 2
1 cup cabbage, minced into rice like texture
2 tablespoons cilantro, chopped
1/4 cup water
1 tablespoon green onions, minced
1/2 teaspoon garlic, minced
1/2 teaspoon fresh ginger, grated
2 tablespoons lemon or lime juice (slices?)
Pinch of cayenne pepper (optional)
Pinch of cumin
Salt and pepper to taste
Prepare cabbage and recipe ingredients. Mince cabbage into a fine, rice like texture. On medium heat, saute’ cabbage and garlic in lime juice and water for 1-2 minutes. Mix in ginger and fresh spices and simmer for another 3-5 minutes until cabbage is tender, stirring occasionally and adding water as needed. Remove from heat and mix in fresh, minced cilantro just before serving. Garnish Lime Cilantro Cabbage Rice Phase 2 with fresh lemon or lime wedges.
