Crispy Chicken Salad an HCG P3 Recipe

This delicious Phase 3 Crispy Chicken Salad recipe with Berry Vinaigrette is amazing as an entree or lunch salad.  Packed with loads of nutritious raw vegetables with plenty of protein to keep you satisfied throughout the day.

The sweet and tangy Berry Vinaigrette really sets of the crunch of the chicken.  I like to serve it with a side of cool Sriracha or Chipotle Ranch dressing and find that the spice really adds a kick of extra flavor.

I whipped up the Berry Vinaigrette for the salad with some fresh Marionberries we picked that day at a local farm but you can use any fresh berry that is easily available to you.  Fresh raspberries make a vinaigrette that works especially well for this HCG P3 recipe.

This Phase 3 Crispy Chicken Salad recipe with Berry Vinaigrette is a great way to get your 5-7 vegetable servings for the day.  It’s great for lunch or dinner as an entree or side salad.

Phase 3 Crispy Chicken Salad Recipe

IngredientsPhase 3 Crispy Chicken Phase 3 Salad Recipe. Almond crusted chicken in a pan

1 pound chicken breast

4 servings fresh salad greens (I sometimes use a spinach salad blend)

4  hard boiled eggs

2 cups raw vegetables (radish, tomatoes, zucchini, bell pepper, cucumber, etc.) 1/2 cup per serving

1 cup almond flour

1 Egg (for egg wash with the chicken)

1/2 cup walnuts, chopped (approximately 2 Tbs. per serving)

2 Tbs. olive oil

Salt and fresh black pepper to taste

Directions

Prepare chicken tenders or cut chicken breast into strips.  Dip in egg wash and dredge in almond flour, black pepper and a little salt.  Mix up your Berry Vinaigrette dressing and chill in the refrigerator until ready to serve.  Chop and prepare vegetables and walnuts, slice up hard boiled egg. and arrange salad greens with toppings.  Heat oil on high heat and lightly fry chicken strips for 1-2 minutes on each side until chicken is cooked.

Berry Vinaigrette Dressing

Ingredients

1 cup fresh berries (raspberries, blackberries, marionberries, or strawberries work best)

1/4 cup red wine vinegar

Stevia for extra sweetness (optional and to taste) (Hint:  Try chocolate stevia to create a similar flavor to Balsamic vinegar).

Directions

Puree ingredients together and chill until ready serve

Maintenance Phase 4 modifications:  Add a little balsamic vinegar to your dressing

Another serving suggestion for my Phase 3 Crispy Chicken Salad Recipe is to serve it with berry vinaigrette dressing with a side of Sriracha ranch or Chipotle ranch spicy dressing.  The sweetness of the berry dressing combined with the spice of the chilies in the ranch create a delicious combination of flavors.
