This delicious HCG Phase 2 Shrimp Recipe was inspired by a beautiful crop of heirloom tomatoes I received from my local CSA (Community Supported Agriculture). I diced up my tomatoes and started tossing in spices like cayenne and cumin and of course loads of garlic and came up with this savory warming Phase 2 soup recipe that was totally satisfying on my last round on HCG Phase 2. I topped it with some fresh green onions and served it up. My taste prefers quite a bit of spice and heat but feel free to adjust the heat level to your own tolerance and palate. Cayenne pepper as a spice has properties that actually increase your metabolism and assist weight loss.
I have found that on the rare occasions when I’ve been hungry on HCG Phase 2, a warm soup is just the thing to fill me up and keep me on track. One HCG Diet trick when you find yourself a little hungry or experiencing food cravings is to add a little extra liquid to your soup and reserve an extra cup of soup to enjoy as a satisfying warming drink between your HCG Diet meals.
Spicy Shrimp and Tomato Soup Recipe (HCG Phase 2 Shrimp Recipe)
100 grams Shrimp, weighed raw
1 cup tomatoes, chopped
1/4 cup water
1 cloves of garlic, crushed and minced
Pinch of oregano
Pinch of cumin
Pinch of cayenne pepper (to taste)
Green onions for garnish
Squeeze of lemon (optional)
Salt and pepper to taste
Combine all ingredients in a small sauce and bring to a boil. Reduce heat and simmer for 7-10 minutes to intensify flavors and spices adding water as needed. Add shrimp and cook an additional 5-7 minutes on low heat until shrimp is cooked. Garnish with green onions and serve. Hint: For a smoother tomato soup base, you can puree or pulse the tomatoes and spices in a blender before adding the shrimp.
