Green Chili Chicken Casserole for HCG Phase 3

I love the taste of mild green chilies and bring on the cheese. This is a super low carb, creamy, cheesy, and delicious Green Chili Chicken Casserole recipe for HCGPhase 3 with lots of healthy veggies, spices, and southwest flavors. Enjoy!

This recipe uses mild Anaheim green chili peppers and a nice Poblano pepper would give the dish a delightful flavor as well.  If you like your Green Chili Chicken Casserole with a little more kick and a little more spice, feel free to add some minced Jalapeño, Habanero, or Serrano chilies to the dish.  Yum!

Green Chili Chicken Casserole for HCG Phase 3

Ingredients

12 ounces of chicken breast, cubed
4 eggs
1/4 cup sour cream
1 cup roasted and peeled green chilies (you may substitute canned green chilies)
1 cup Monterey Jack or Cheddar Cheese
1/2 cup zucchini, sliced
1/2 cup tomatoes, drained and diced
1/2 cup mushrooms, sliced
1/4 cup onions,chopped
1 clove garlic, crushed and minced
1 tablespoon olive oil

Directions

Lightly spread an 8 inch baking dish with a little olive oil. Saute’ chicken in remaining olive oil with onions until lightly brown.  Layer baking dish with chicken, green chilies, vegetables, mushrooms, and spices. Lightly beat eggs, mix in sour cream, and pour over vegetables and top with cheese. Bake at 375 degrees for 25 minutes or until center is cooked and cheese is lightly browned and bubbly.

Note:  If you want a slightly thicker sauce, add a pinch or two of Konjac flour (my favorite low carb and Phase 3 non starchy thickener) or substitute cream cheese for the sour cream

    I would love to buy your book. But it needs to have the calories and fat, carb dietary fiber sugar and protein. the 201 worry free hcg maintenance recipes have.
    I Love that they put that in so no worry

      Oh of course Edi. The Phase 3 cookbook isn’t available to dieters yet and when it is published it will indeed have all the major nutritional information you need to stay on protocol. I am a bit torn though because I really want people to focus more on the quality of the food with regards to nutritional value when on P3. If you are eating the right foods… you will naturally stabilize and be just fine. No calorie counting, no fat gram counting etc. There is still a belief for many people in our society that calories in = calories out that fat grams must be monitored. Not so. So I’m torn between teaching and empowering people to NEVER have to obsess about the details or diet again and giving them the specifics they need to know right now to be successful on P3. So yes, I will be giving you what you need in the P3 Cookbook to be successful but hopefully teaching and empowering you not to need those details forever. I hope that helps explain my philosophy.

    It doesn’t say on the recipe what we do with the sour cream…

      You mix it in to the eggs before you pour it over the vegetables and chicken. I corrected the recipe. Thanks for letting me know 🙂
