Pepperoni Pizza Frittata Recipe Phase 3
Ingredients
2 large eggs
Splash of milk or half and half
10-15 slices pepperoni
1/2 cup mozzarella, shredded
1 tablespoon parmesan cheese, grated
1/4 cup mushrooms sliced
1/4 cup onions, minced
Pinch of red pepper flakes
1/4 teaspoon Italian herb spices (oregano, basil, spice mix)
1/2 teaspoon butter
Salt and pepper to taste
Directions:
Saute onions and mushrooms with butter on low heat until soft and sweet in oven safe frying pan. Allow to cool to medium heat before adding Pizza Fritatta ingredients. Lightly whip eggs with milk or half and half. Add salt, pepper, and red pepper flakes and pour over mushroom and onions mixture. Layer mozzarella cheese and pepperoni and sprinkle with parmesan cheese and herbs. Bake at 350 for approximately 20 minutes or until cheese is melted and pepperoni is crisp.
Just made this frittata this weekend. Had some friends over and wanted to eat the same things they did. I added an extra egg, the pepperoni, some chopped red peppers and it was fabulous. I made it in an 8 x 8 pan. Needless to say, there was no leftovers. It was sooo delicious it felt like a cheat but obviously it was not.

Thanks Tana! I rather love it. Its a great keto recipe to enjoy on maintenance also. It feels like a cheat but its really just healthy low carb. I recommend really dressing it up with loads of healthy vegetables too for extra nutrition.
