HCG Diet Chili Recipe for Phase 2
So many people have written and shared that this is one of their all time favorites from my book, The HCG Dieter Gourmet Cookbook P2. So yummy that the whole family will enjoy it and I suspect you will continue to enjoy it long after the diet is over. Nice and spicy. You can of course adjust the heat level down or (if you’re like me) crank it up! Enjoy!

Directions:
Brown ground beef in a small frying pan, add onions and garlic. Stir in tomatoes and water. Add spices an simmer slowly until liquid is reduced. The longer it cooks, the more tender and flavorful. Add a little water as needed to prevent burning. Serve with chopped green onion or tomato garnish and salt and pepper to taste
Makes 1 serving (1 protein, 1 vegetable or fruit)
P3 modifications: Top with cheddar cheese and a dollop of sour cream.
Nutritional Information: Makes 1 Serving (1 Protein, 1 Vegetable)

This recipe is wonderful. I throw in some beef broth (of course to diet specifications) to make this seem like more. It is amazing the tricks we can pull by fooling our eyes!!! Thanks!!
The chili is one of my favorites! I am playing around with making it even more exciting with a Phase 3 recipe but I swear I still eat it often. So glad you are enjoying it! Doesn’t it just make the diet so much more fun when you actually enjoy the food!

I am just starting P2 tomorrow. I have heard that there is a cabbage soup recipe that I can make that won’t hurt my weight loose. I am surprised since most of them have chicken stock and I know there are both calories and fat grams in most. I did see a fat free chicken stock at the store, but I am still afraid to mess up this very strict diet. Can you advise me?

Hi Liz, Congrats on getting started! All the best to you. You shouldn’t have any problems using broth in the recipes. Best of course is to make your own using approved vegetables like cabbage or celery but using a fat free broth in a pinch won’t mess up your weight loss. I have started recommending using 1/2 broth 1/2 water in my recipes to cut the sodium a bit. If you use a commercial broth it is best to choose an organic brand such as Imagine.
I have a question. Since it is listed as either 1 fruit or vegetable, is it possible for me to ount the tomato as my fruit and still add another veggie to this, ex. onion or asparagus. It sound so tasty and half the time I forget to eat my fruit. I imagine this would be more filling and satisfying if i could add another vegetable while staying in protcol guidelines.

I count it as a vegetable based on Dr. Simeons list in Pounds and Inches. Technically, you are right in that it is a fruit but my recipes in the book use it as a vegetable. You could try mixing those together and see if it stalls your progress but I don’t officially recommend mixing the two. Hope that helps you 🙂
thank you for your respone Tammy. I went ahead and tried it as a fruit and mixing it with a veggie and had a wonderful success, a 2.5lb loss for the following day! I wont be doing this as an every day thing, (don’t want to tempt fate) but it is nice to have that option available.

I questioned the issue of using tomato as a fruit myself when I first began the diet and even had some recipes originally in the book that used both but I decided to stick with the tried and true original protocol and didn’t want anyone to be misled or have stalled weight loss because they mixed veggies. Yes, I totally LOVE all things konjac, Shirataki noodles, Agar Agar etc!!!! A cookbook for these products will be finished in the near future. That said…. all my exuberance and excitement for those products aside….. Yes/No/Maybe So on P2. Many people have used them successfully and they are technically pure fiber so it’s been a matter of debate. Some people have reported the noodles and konjac flour make them stall. P3 and maintenance? Absolutely! Wonderful product with many health benefits. Congrats on your weight loss! very excited for you.
i followed a similar recipe but i made a huge batch using 1 lb of ground meat- i was told you can have 1 cup of the chili as your meal. is this true?
If you want to make multiple servings, I recommend breaking up the lean ground beef (7% or less is best) into 100 gram servings. Then, cook it all together (you may need to adjust the spices a bit to taste) and then separate out by weight the number of servings. That way you can be accurate and still cook a big ol batch! Hope that helps you. I wouldn’t rely on a cup measurement but would focus on starting with 100 grams and then weighing out the individual servings.
how many calories are in this?
The chili has 195 calories, 23 grams of protein, and 8 grams of fat. You can reduce the amount of fat by lightly boiling off the fat from ground meat or grinding your own chunks of lean beef. Hope that helps you 🙂
On the radish receipe can I use olive oil on p2?
No oil on P2. P3 is fine.
1 vegetable or fruit?? Deos this mean I should eat a fruit along with this?
I just call a tomato a vegetable for the most part. It is technically a fruit but yes, you should have a fruit in addition to the chili.
Tea.
I make iced tea using an organic white tea and organic Stevia. Not only is it sweet but the tea package info says that there is only 2 calories per cup. It is great because when I want something sweet, badda~bing there it is! It can be really sweet and I only use a tablespoon of Stevia per 1-gallon.
Does one still need to count calories on these organic teas, such as green tea, yerba, etc.?
Sounds delicious!!! I love to play with various iced teas. Some herbal teas and green/white blends are just delicious on phase 2 of the diet, iced or hot. I love a green tea with mint and sweetened with stevia. Thank you so much for sharing your experience.
With regard to calories there aren’t any. In fact green tea and Yerba Mate actually seem to stimulate an extra fat and calorie burn so its actually beneficial while on the diet!
Hi. I have a question about jalapenos. They are literally one of my favorite foods in the world and I would love to be able to eat them but I can’t find any mention of whether or not you can eat them during P2. I am currently R1P2D15 and am down 25# so I don’t want to do anything to mess up my weight loss. Do you have any experience with using jalapenos and whether they adversely affect the diet or not? Hi Clint,
Sorry but jalapenos aren’t good for P2. I would just hang in there a little longer until you transition into phase 3 of the diet. If you like the heat I suggest a touch of cayenne pepper. You can even make up your own hot and spicy pickles or cabbage using hot pepper flakes with a pinch of salt and of course vinegar.
hey i have a question. i did the diet back in the end of last year, things got hectic in my life and i just never went back to p2 so now im gonna start over and i was wondering about pickles. i literally love them and their calorie count is very very low. the list says i can have cucumbers so i was wonderin about pickles. last time i was on the diet i lost 30 some lbs and i didnt really exercise and i ate pickles that whole time. whats ur thoughts?
I have a question what is phase 1 2 or 3
Hi Priscilla! Phase 1 is the Prep and Load phase when you’re preparing for the HCG Diet and loading properly before beginning the HCG Phase (P2) of the diet. This is when you want to load up on vitamins and minerals, and fats.
Phase 2 (P2) is the HCG Phase when you use HCG in combination with a low calorie (500) diet. This is where my cookbook comes into play. The recipes add flavor and variety to your diet to help you stay on the diet without getting getting bored.
Phase 3 (P3) is the Stabilization Phase. It’s a 3 week period of a varied, normal calorie diet with the exception of starch and sugar.
Phase 4 (P4) is the Maintenance Phase. This is where you gradually incorporate carbs back into your diet and maintain your new weight loss for life.
You really need to read Dr. Simeons’ book Pounds and Inches and you can find the free pdf ebook by searching on the internet.

Hi Jane! Buffalo isn’t an allowed food until Phase 3 but feel free to use it after you’ve completed Phase 2!

Please don’t show a picture of chili with beans in it with a receipt that doesn’t have beans in it, Beans are a no no. Make sure you are truthful in all you do because all of us on the HCG plan need only the best, truthful and honest information. The picture is pretty but inaccurate. If you are trying to sell the cookbook and don’t actually care about the people buying it fine, but be honest. HCG is an amazing program and if you are trying to help people good if you are trying to make a buck at least be truthful. I have done HCG and everything I have learned I pass on for free and Im totally honest.Let’s see if you post this for everyones benifit.

Why are beans a no no?
Dr. Simeons, the creator of this amazing diet, did extensive research and found limited foods that could be eaten without causing stalls, etc. and beans was not on the list of approved foods on Phase 2 as they are a starch.
I am doing very well with my HCG other than forgetting my second pill in the afternoon I am on p2 right now and would like to know if oatmeal is ok in the morning?
Hi Charlene! Great to hear that you’re doing well with this amazing diet! Do you use any kind of calendaring system on your computer? You could add a reminder in it, or on your cell phone. Consistency is very important so I would recommend trying anything to help you remember to take your HCG.
Oatmeal is a grain (like bread) and a starch so it’s not allowed on P2 or P3, but you can re-introduce it back into your diet in P4.

Wow this stuff is so good. I made a ton of servings, and froze them for those time I dont want to cook. Weighed and measured it all out of course. It is even better the next day. I will definitely be making this, even when off the HCG diet. This is incredible. I’m gonna try and make it with chicken. If I could make this for every meal, I would definitely succeed on this diet 🙂

I have made the chili a couple of times. It is a great lunch to pack for working people. I am almost ready to start p3 but cannot find your p3 book on the website. Can you give me exactly what to look for. I have one of the p2 books and it has been wonderful.

My Phase 3 cookbook is still ‘in the works’ — I’m still perfecting the recipes and writing the rest of the book. It won’t be available until later in the year. In the meantime, you can use the many P3 modifications that are included in both of my P2 cookbooks.

I noticed onions being added to this recipe but there’s already a vegetable (tomato) – does this mean onions are an add-on that don’t count as a vegetable then?
That’s a great question Susan! When onion is used in small amounts as a spice, it doesn’t count as your vegetable. If you have any hesitation in using it, feel free to remove it from any recipes. Best of luck on your diet!

I don’t know what I did wrong but I had the strawberry cheesecake for lunch & the chili for dinner, & I woke up the next morning & GAINED 4#s!!!! Even tho it was great (cuz my family had meatloaf & mash potatoes)I’m afraid to make it again :'(
Hi Stephanie! I would look for other things that might have caused the weight gain since both of these recipes are strict to what can be eaten in P2. Also make sure your hcg is fresh and kept refrigerated at all times as this will cause weight gain as well.
I bought a new scale turns out zip only gained one pound. My injections stay in the fridge, I drank plenty of water. I did forget to eat my fruit but I don’t know why I would gain 🙁
Stephanie, anything off protocol, even not eating all your stated foods each day, can cause stalls or weight gain. It seems like eating less would be good, but in this case, it isn’t!

Is the one veggie the equalivent to the 4 oz called for on this diet
Dr. Simeons didn’t put a specific amount on his vegetable portions. Feel free to add more or less than 4 oz to any of my recipes!

Phase 1 is the gorging. I think you mean phase 2. This is for phase 2.

Hi. Just made your chili recipe. It was great. I added more onion and celery to it. I thought it was tasty for a diet recipe.
I added a little more water and it was delicious! Filled me up!!
I love this recipe. Delicious and I don’t feel likeI’m dieting when I have it. My Dr allows Miracle Noodles on Phase 2 so I add a 1/4 of a pack of noodles to each serving ((I make a batch of 4 servings at a time) and it makes this recipe even more filling. If you add the noodles DO NOT freeze the portions. The noodles do not reheat well from freezing.

How much is a serving size of this chili?
It’s 100 grams of ground or chopped beef with tomatoes. A single serving but you can make multiple servings at the same time and divide it up by the amount of beef you use. I often used about 400 grams of beef to make 4 servings.
II just ordered both cookbooks. I am on day 10 down 9 #. Are clams ok in phase 2?
Enjoy the recipes! So proud of you! 9# down is a great result so far. No clams on Phase 2 I’m afraid. Clams can be enjoyed on HCG Phase 3 (Stabilization/Low Carb Phase lasting 3 weeks following HCG Phase2).
Approved HCG Phase 2 seafood are: Fish, Shrimp, Crab meat, and Lobster.

How does this qualify for P2? You have 2 veggies, Tomato & onions.
I have included small amounts of onions as a spice. Most dieters don’t have a problem. If you notice any weight gain, discontinue or reduce the amount. It will still taste great!
