Guacamole: A Super Healthy and Delicious Phase 3 Food
One of my personal favorite avocado recipes on the hCG Phase 3 is Guacamole. Avocados are a perfect addition to your Phase 3 meals and contain healthy fats, anti-oxidants, and other nutrients your body needs to stabilize, nourish, and help bring your body into balance again after the restrictive hCG Phase 2.
Lately, I’ve been enjoying a bounty of raw summer vegetables and decided to mix in some radish and carrot bits into my traditionally simple guacamole recipe. The result was a tangy, spicy, crunchy, mix of creamy avocado and tasty vegetables. Use your imagination and add as many raw vegetables as you like to add even greater nutrition, fiber, and flavor to the recipe.

Here are a different ways you can enjoy my Kicked up Guacamole Recipe on your Phase 3:
- Eat it on eggs or on top of a savory omelet
- Serve it up with tacos or make Guacamole lettuce wraps
- Guacamole dip served with raw vegetables.
- Mixed in with Chicken Salad instead of Mayonnaise
- Pureed and turned into a spicy salad dressing

Kicked up Guacamole Recipe with Vegetables
Ingredients
2 avocados
1/2 jalapeño, minced (use more or less to adjust heat and spice level)
Juice of 1/2 lemon (or lime juice)
2 Tbs. onions, minced
Splash of cayenne pepper sauce (substitute a pinch of cayenne pepper)
Salt to taste
Vegetable Extras (optional)
1-2 radishes, minced
2 Tbs.s carrot (minced)
medium tomato, diced
2 Tbs. bell pepper, minced
1 Tbs. garlic crushed and minced
Fresh Cilantro leaves
Directions
Mince and prepare your vegetables and set aside. Gently mash avocado to desired level of chunky goodness, Fold in and combine vegetables and spices, and top with cilantro for garnish. Store guacamole in the refrigerator and topped with additional lemon or lime juice to prevent browning.
Makes about 4 servings
Serving suggestions: Top with sour cream and/or cheese, and serve with additional vegetables for dipping. Serve with my Kicked up Salsa Recipe!
