This Super Green Scramble recipe for HCG Phase 3 was inspired by my desire to eat more green foods. Seriously, what better way to get all the health benefits of super green vegetables like Spinach, cilantro, arugula and avocado than all dressed up and scrambled with eggs. Yum! So one day I put it all together and topped it with a little sour cream and Jalapeño sauce. It was absolutely delicious! I hope you enjoy it.
Super Green Scramble Recipe
Ingredients
3 eggs
1/3 avocado
1 cup Spinach (Substitute kale, chard, or other favorite green leafy vegetables)
1/4 cup Arugula
Oregano
Spring onions
1 Tbs. Garlic Curls (or 1 clove garlic if fresh chopped garlic if curls aren’t available
Green Jalapeno Sauce (optional)
1 Tbs. Butter or Ghee
Fresh Cilantro to taste
Capers (optional)
Cheddar or Monterey Jack Cheese (optional)
Sour Cream (optional)
Salt and pepper to taste
Directions
Melt butter or ghee and sauté with garlic curls for a minute. Gently whip eggs with oregano and a little salt and pepper and pour into frying pan. Gently stir and fold eggs into hot pan. Add spinach and greens and cook for 2-3 minutes until soft scrambled. Top with sliced avocado, arugula, spring onions, jalapeño sauce, and serve.
