Nothing is more satisfying and warming on the HCG Phase 2 than a bowl of delicious soup. Soup is a filling and delicious way to enjoy your hCG diet vegetables and is one of my favorite tips to help curb any hunger pangs you might have on P2 VLCD (Phase 2 Very Low Calorie Diet). This Chipotle Asparagus Soup recipe for the HCG phase 2 was one of my favorites on P2. I love the spicy, smoky flavor and found that it was a great way to cook up asparagus.
One way to make this recipe even more flavorful is to substitute chicken or beef broth instead of water to add extra flavor if you are having chicken or beef for that meal. Chipotle Asparagus Soup Recipe HCG Phase 2
Ingredients
6-8 medium asparagus spears
1 cup water
2 Tbs. lemon juice
1/8 tsp chipotle chili
1 clove garlic, crushed and minced
3 drops liquid smoke (substitute smoked salt)
Fresh Cilantro
Salt and pepper to taste
Directions
Steam asparagus lightly in water until lightly tender (do not overcook). Puree steamed asparagus, liquids (asparagus water and lemon juice) chipotle chili, liquid smoke, garlic and 1-2 sprigs of fresh cilantro in a food process or blender. I use my bullet blender. Lightly warm in a small saucepan. Salt and pepper to taste. Garnish with fresh cilantro.
Makes 1 serving
