One of the biggest challenges for me this time of year is the abundance of sweets and desserts around the Thanksgiving and the holidays. It can be really tough to find delicious, low or no sugar desserts and satisfying low carb dishes to eat and serve at Thanksgiving. When I started my Healthy Healthy program in October with a group of like minded dieters who were totally committed to healthier holiday meals, I promised to work on a delicious low carb dessert especially designed for Thanksgiving.
Nothing speaks more heartily of a traditional Thanksgiving dessert than Pumpkin Pie. So I combined the flavors of Thanksgiving Pumpkin Pie into a crustless, Pumpkin Pie spiced, Whipped, Low Carb dessert for the holiday season. It is suitable for any low carb diet program and is sweetened with Stevia instead of sugar. For those on the hCG diet protocol, this Pumpkin Pie low carb dessert would be okay for most dieters in moderation on Phase 3 and a healthy holiday dessert for a healthy weight maintenance plan (Phase 4)

Low Carb Pumpkin Pie Whip Dessert
Ingredients
2/3 cup pureed Pumpkin
1/2 cup whipping cream (save some to serve as topping)
2 Tbs. Mascarpone Cream, softened
1/4 teaspoon vanilla
4 Tbs. walnuts, crushed
Stevia to taste (Substitute
Directions
Whip cream with softened Mascarpone cheese until smooth. Add vanilla, stevia, spices, and pumpkin pie spice. Gently puree on low speed stirring to combine until pumpkin mixture is blended. Top with crushed walnuts, stevia sweetened whipped cream, and an extra sprinkle of pumpkin pie spice.
Makes 4 servings
Special note for HCG Dieters on Phase 3: Pumpkin is one of those foods that some people have no trouble with on Phase 3 and some may not. If you find that you have a problem stabilizing on your Phase 3, you may want to exercise caution with trying this recipe until you are in HCG Maintenance Phase 4.
