Italian Tomato Salad Recipe HCG Phase 2

When I was on the HCG Phase 2, one of my favorite ways to work with tomatoes was making fresh, delicious salads with lots of flavor and fresh herbs.  My Italian Tomato Salad Recipe was inspired by my love of fresh basil and the classic Caprese salad.  The addition of fresh, minced basil leaves add that classic Italian flavor and the hint of stevia is reminiscent of balsamic vinegar.

So lets talk how to YUM up this simple HCG Phase 2 Italian Tomato Salad Recipe for the Stabilization HCG Phase 3.  Keep thinking along the lines of a Caprese salad and feel free to add fresh or smoked mozzarella and toss in a drizzle of extra virgin olive oil.  I sometimes like to add in a few capers and Yikes!… Extra garlic.  If you really want to get deliciously crazy modifying this recipe for HCG Phase 3, add a little crisp prosciutto on top.

Do NOT use Balsamic vinegar on either HCG Phase 2 or 3.  Many HCG Dieters trip up their weight loss on Phase 2 and unknowingly sabotage their stabilization on Phase 3 when they add Balsamic vinegar to their food.  Balsamic vinegar simply has way too much sugar in it.  Anything that tastes that sweet is simply a NO GO on either the HCG Phase 2 or 3.Many vinegars are fine on the HCG Diet such as white vinegar, red and white wine vinegar, and of course super healthy Apple Cider Vinegar.

Ingredients

1 cup grape or cherry tomatoes, halved

1 clove garlic, crushed and minced

Fresh Basil, rolled and minced

1 tablespoon vinegar

Stevia to taste

Salt and pepper to taste

Directions

combine tomato, garlic and spices and marinate for 10-15 minutes, chill, and serve.
